Conservas Codesa, S.L. is a Cantabrian cannery specialised in Cantabrian anchovy fillets, crafted by hand in Laredo. The anchovies are selected during the fishing season, slowly matured in sea salt, and then cleaned individually by hand. Packed in olive oil, they offer a firm texture, balanced flavour, and impeccable presentation in boxes of 24 units, each containing approximately 30 fillets (size L) with a net weight of 165g.
History
Founded in 1976, Conservas Codesa has preserved a family legacy devoted to the art of salting and filleting Cantabrian anchovies. Over three generations, the company has perfected its production by blending traditional techniques with modern quality control.
Its premium line of fillets in olive oil has become a symbol of Cantabrian gastronomic excellence, recognised both across Spain and in key international markets.
