Third-generation family business located on the shores of the Cantabrian Sea, in the picturesque fishing village of Laredo, recognized worldwide as the cradle of quality anchovies. Here we make 100% of our products, specializing in the production of salted anchovy fillets from the Cantabrian Sea and gildas (double anchovies).
They use bocarte (Engraulis encrasicolus) caught "at dawn" during the spring season, using the purse seine, a selective, ecological and traditional fishing technique. We ourselves select only the highest quality and largest batches in the Cantabrian ports.
After a process of preparation and curing of the salting in the winery for approximately one year, expert Cantabrian fillet hands carefully convert the salting into delicious anchovy fillets. Always following traditional and artisanal methods, we prioritize quality over quantity, thus guaranteeing an exceptional final product.
