Albacete (Castilla-La Mancha)
Dehesa de los Llanos
Fundada en 1893
Dehesa de los Llanos produces artisanal cheeses made from raw milk of Manchega sheep on its estate in Albacete, where the entire process is carefully managed—from grazing to ageing. Their range stands out for its balance of tradition and technique, with natural ageing that enhances the cheeses’ aromatic intensity, firm texture, and elegant flavour. Their Semi-Cured and Cured cheeses are internationally acclaimed for their outstanding quality.
History
The cheesemaking tradition at Dehesa de los Llanos dates back to the 19th century, when the estate began producing cheese from its own flocks. In the 20th century, the facilities were modernised while preserving the artisanal essence and a strong respect for the natural environment.
Their Cured Manchego Cheese gained global recognition after being named Best Cheese in the World at the World Cheese Awards, cementing their reputation as a benchmark for quality.
