Billecart-Salmon is a family-owned maison based in Mareuil-sur-Aÿ, renowned for its exquisitely delicate Brut Rosé and its hallmark style of utmost precision. The house employs slow, cool fermentations, parcel selection, and extended ageing on lees with restrained dosage. Its range includes both non-vintage cuvées and prestige bottlings such as Nicolas François, Elisabeth Salmon, and the single-vineyard Clos Saint-Hilaire—all crafted to achieve aromatic purity, silky texture, and an exceptionally fine mousse.

History

Founded in 1818 by Nicolas François Billecart and Elisabeth Salmon, the house has remained in the hands of the same family for seven generations. In the mid-20th century, Billecart-Salmon pioneered cold clarification and slow fermentation techniques that came to define its elegant profile. Over time, the family consolidated its own vineyard holdings and launched iconic cuvées, including Clos Saint-Hilaire, a benchmark single-vineyard Champagne with extraordinary ageing potential.
