History
Founded in 1818 by Nicolas François Billecart and Elisabeth Salmon, the house has remained in the hands of the same family for seven generations. In the mid-20th century, Billecart-Salmon pioneered cold clarification and slow fermentation techniques that came to define its elegant profile. Over time, the family consolidated its own vineyard holdings and launched iconic cuvées, including Clos Saint-Hilaire, a benchmark single-vineyard Champagne with extraordinary ageing potential.
